LIDO COCINA TSINA OPENS IN LA FUERZA MAKATI
Chinese cuisine and its people have been close to me. My whole career life has been associated with
the Chinese community – from Quezon City, Binondo and now Makati City.
Binondo has been home to me for quite some time. Being the world’s oldest Chinatown, the
streets were already a hub of Chinese commerce even before the Spanish colonial
period. As the center of commerce and
trade of Manila, all types of businesses managed by Filipino-Chinese thrived
for centuries.
In 8 decades, there is Lido Cocina Tsina. In celebration of its 80th year,
they have opened a new branch at La Fuerza Makati. From the quaint streets of Binondo, the
culinary brand now invades the towering modern edifices of Makati City.
In the opening of its 15th branch, we are fortunate to have
been invited for a feast. And despite
the drizzle, we came in time. Known as
the home of Chinese Pugon-Roasted Asado, it is but fitting that we try the said
specialty.
Along with Pugon Roasted Asado (PhP295.00 for 1/4 kg), we sampled on
other best-sellers: Manchurian wings (PhP295.00), 16-spiced Shantung Pork
(PhP275.00) and the Drunken Lechon Macau (PhP290.00).
Basting a succulent loin of pork, Mr. Lido, a Cantonese chef, developed
his own secret recipe of asado, known as Lido’s Pugon Roasted Asado. Roasted in an old-fashioned brick oven (pugon)
using firewood, the marinated loin was well-accepted by the Filipino
community that it has been passed on and loved from one generation to another
and continues to be a best-seller even as we taste it. The recipe is now 70-years old.
Another pork best-seller is the 16-spice Shantung pork. Shantung cuisine is a cooking style from the
eastern province of Shandung in China and considered one of the most
influential East Asian cuisines. The
pork chop is seasoned with 16 kinds of spices ranging from mild to tasty spice
concoction.
Druken Lechon Macau is my favorite. The pork is immersed in premium flower wine
and other spices that provides a balance of flavors. Surprisingly, the carefully chosen pieces of
pork belly are cured for 60 hours. For
that long hours of preparation, it is definitely worth the wait.
And of course, our table wouldn’t be complete without a chicken
dish. It’s everyone’s favorite after
all. The Lido’s Manchurian Chili
Wings boasts a gingery oriental sauce that is both pleasantly spicy and
sweet. It offers a unique taste of
chicken wings.

In a typical Chinese restaurant ambiance but with less intimidation, the
dining experience at Lido Cocina China was rather casual yet fun. The relaxing vibe and the oriental decors as
interior even made the feast festive in an East Asian culinary
perspective.
