Lakwatserong Tsinelas


When I passed the Bar Examinations, I booked a flight to Macau together with two of my childhood friends and travel buddies.  It was a series of misadventures and unfortunate events caused by the gullible selves we had back then as a traveler.  That was years ago. 

I’ve always wanted to revisit Macau and create new memories.  Fortunately, I am back this time with my entire family. And the best part is – we made it without any tour guide.

Is there anyone familiar with the province of Quirino in the Philippines?  Aside from having been mandatorily memorized in school as one of the provinces in the Cagayan Valley Region, I had no insights of what to expect in this land-locked province.

Booked for a flight from Manila to Cauayan, Isabela, I together with Aaron, Mica, Christian, Erwin, Edgar, Ferdz, Marky, Izah, Kara, Sinjin and Eric will serve as the Quirino explorers in this sojourn.  I was the last one to arrive at the airport, a few seconds before the check-in counter closed. (my apologies friends!)

There’s a traditional way of preparing chicken for a meal that’s certainly not for the animal activists to witness.  From the mountains of the Cordillera region of the Philippines, a dish named Pinikpikan is served.

In a homey coffee shop named Café Yagam, a plate of pinikpikan was the main dish for our dinner.  That was the first instance I tasted the said dish.  But there’s more to a pinikpikan that the shop has to offer.


Maintaining the ambiance of a family home, Café Yagam’s interiors can easily caught the attention of vintage collectors and travelers.  An array of antiquated pieces of ornaments, luggage, travel and architecture books serves as an accent to the fireplace that sits in the middle.

It was getting dark and exhaustion was about to conquer my physical and emotional being.  An early dinner was set before we leave for Manila.  And who am I to resist?  Especially that we will be dining at one of San Fernando, Pampanga’s elegantly designed restaurants named after an Arabic term for marketplace – Suoq.

The rice cakes have been an all-time favorite snack of every Filipino.  My childhood memories reminds me of an ordinary day where right after lunch time, we were obliged to take a short nap, then an afternoon merienda comes next – served with varied kakanins (rice cakes). 

On this day at San Fernando, Pampanga, with a stomach still trying to digest the gastronomic delights offered sans the short nap, an afternoon snack stopover was on its way.  This time, we were in one of the famed restaurant chains of rice cakes – Susie’s Cuisine.

The master of the kitchen does not go by the biological name of Nona.  She is Bernardita Mercado, whose grandchild seemed to pronounce lola incorrectly as nona, thus, the name of the restaurant.  Together with her daughter, Lejah Gallardo, an open-aired dining establishment with eclectic interiors was born in Pampanga through their combined culinary expertise and entrepreneurial skills.
